There is nothing like a comforting, delicious soup to keep you company throughout winter!

I’ve never really been a soup person until I found this recipe. It’s equally delicious as it is healthy and I can feel my body loves it too. Do you ever get that when you eat something amazing and nutritious? It’s like your body is rejoicing.

It’s originally an ayurvedic recipe and an excellent Vata Dosha balancer. I’ve tweaked the recipe a bit to make it more suited for me and my tastebuds.

You will need

  • 7-8 large carrots, chopped
  • 2 sweet potatoes (medium size), chopped
  • 1 onion, chopped
  • 3 tablespoons of grated ginger
  • 2 cloves of garlic (optional)
  • 1 teaspoon cumin seeds
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala
  • 3 cups of broth (vegetarian or bone broth)
  • 1 cup of coconut milk
  • a sprinkle of chili powder for some kick!
  • a handful of coriander to add as garnish

Instructions

In a large saucepan cook the garlic and onion in a bit of water or oil until the onion turns translucent.

Add the ginger, carrots and sweet potato and continue to stir.

Then add the broth, coconut milk, spices and leave for 20 minutes or so, until the carrots and sweet potatoes are well cooked.

Once they are well cooked, turn the stove off and let the soup sit for a few minutes to cool down a bit.

Then use a stick blender to transform into a puree. Add to a bowl and serve with a bit of coriander. Voila!
